Sent a bull to slaughter 4 weeks ago, hanging weight at 29 months = 330 lbs. Sent a cow 2 weeks later and her hanging weight was 360 lbs. I have not got the cow back yet but the bull meat was excellent, surprisingly so. I expected a higher hanging weight on both animals. This is not the best time of year to send them off to slaughter but the timing was right for us. We will look to beef animals in late october/early november next year.

Not much cover on that carcase. Given the age, I would have expected at least 100 lbs more. Maybe next time slaaughter late Spring when they've had a chance to gain on grass. cheers, c.

Are you referring to the Bull Carcass or both? The cow seemed to have decent cover to me. The bull never developed much of anything in any dept. so his fat cover was not a shocker to me. However the meat from him was outstanding. I will not hesitate to butcher a bull in the future. My cows are definitely what I would deem dairy type so the weights may be relative. Now that we have both in the freezer and have taste tested the meats we are very pleased with the quality of the beef. The butcher, whom has not done Dexters before, was somewhat critical of the bull carcass yield. When I picked up the cow cuts last night he changed his mind. He said that the yield from both was better than a full sized beef relative to the waste and compared to a conventional half beef. This realization was front and center because I had him save all the scraps and bones for a dog breeder friend of mine. So, while the cuts are definitely smaller, the outcome and quality are superior.

Yes Gene , you are right ...There is a LOT of difference in ground beef...When we had our "puny" Dexter steer done, when I opened our first package of hamburger, it was the BEST I had ever seen....It was better than Sirloin hamburger...And there was very little shrinkage in the burgers and almost no fat...Just enough fat to coat the pan.....They were so good , very tenders , the best hamburger I ever ate...I know I probably will never get that good of hamburger meat again....But our next steer is going to done in mostly all hamburger....I can't wait for our next steer...We have over a year before he is old enough....Can't wait....

Hi All,
we just recently took in a 4 or 5 yr old cow. She was 988 live weight and 672 hanging weight. The ground beef was to red and fresh, great beef.

Hi whoeveryouare: that's a good percentage. Do you have the hanging weight to saleable meat yield data? That's where Dexters shine. Far less waste.
