I finally cooked some steaks last night from the last steer we butchered. He was 27 months old, butchered in December so he finished on bermuda grass hay with about 3 to 4 pounds of mixed creep feed and sweet feed twice a day. He was smaller than I wanted him to be, 626 lbs, I think, with 305 hanging weight. I got the grill hot, put the steaks (1 inch thick) on for 4 minutes on each side and then let them rest for about 10 minutes. We like them a little on the pink side of medium. they were the best ever We had a teenage boy who is in FFA and he just couldn't believe that they were my little Dexters, not "corn fed" angus. He couldn't wait to get back and tell his ag teacher. This is the same teacher who was telling the FFA kids that Dexters were a very tempermental breed of cattle, and that they were very hard to handle ! Tanner told him how easy they were to feed and handle, because he helps me feed somethimes. I don't know where the teacher got his info, but this kid set him straight! P.J.

I'm really jealous. Whatever you do, don't ever sell dexter beef for a living. We've been totally wiped out by our butchers. I haven't had a steak for months, and our next steer for our own use will not be going for another few months yet! Soooo annoying. When my Angus come through, hopefully they won't sell as well

Clive, I know you're right!! I've been selling a few steers and have had to turn people down, so that we could put some in our freezer. right now I've got 3 people wanting beef and only one steer to butcher. P.J.
