The knowledge on here is great!
I wonder what we should do to finish ours out next year down here in Florida? They will be 27 months old in February. We typically have the following available to put weight on that time of year:
1) -bahia round bale supplemented with alfalfa (hay or pellets) 2) -bahia round bale supplemented with a peanut roll (peanut plants after the peanuts have been harvested) 3) -bahia round bale supplemented with timothy hay
Peanut roll and alfalfa are legumes. Clover doesn't grow in our area.

I fairly sure that peanut rolls are on the list of accepted feeds of the American Grassfed Association (AGA). I don't know anything about alfalfa/lucerne except I remember reading all legumes are high in omega-3's, but what they are like as hay I've not read. Fixin to process a 2 yr old bull and was planning on sending him off next week but the winter rye is now coming up very green and based on this conversation I was thinking that I should hold off for a week or two to get the green grass effect. What are your thoughts?

I would have thought it would take months for a flavour to get into the meat. Couldn't be certain, just a guess really.
