Thought I'd better start a new thread, not related to prices.
I'd like to bring up somethig important if some of you want to put a co-op together for meat sales.
NOT EVERYONE FEEDS THE SAME WAY (even if they say they are). THIS PRODUCES VARIATION IN QUALITY.
All it takes is one person to stint on the feeding, and produce an inferior, tough carcass, and all the good the others have done is out the window. It's a good idea to get the best concensus you can on how animals will be finished. This means buyers can learn to trust the quality, flavor and tenderness, which will put you miles ahead. c.

I agree. Also, not every animal on the same feed will finish the same, much depends on genetics.

Our coop is kind of an on line farmers market. You choose what you want and which farmers you want to by from. The farms have there own profile where they can post how they raise and what there standards are. Here is a link to it. iowafood.org/
