I am so excited to have gone to pick up my steer. He was 17 months old and I got 394 lbs. of meat back He was considered veal cuz he was still nursing. Now, how the heck do I cook these things up? I do not want to screw up anything! Tell me what to do with the ribs, how to cook a steak the right way! Direct me to a site if need be, but I want to enjoy him Thanks, Linda

I'm not a cook so I'm not the one to ask about best methods etc. But, with Dexter beef you really cant go wrong. It's tender and delicious no matter how you cook it I like my little steaks plain with just a bit of salt and pepper, plopped into a Corning dish and cooking in the convection oven while I'm doing evening chores.mmmm ..marion

Well, we just cooked up some T-Bones, a Sirloin, and a few Rib-Eye. One of my kids made a terrayaki marinade and we marinaded it for about 3 hours. DELICIOUS! So excited. Your right Marion, it appears you can't screw these up I was surprised by the greasyness of the hamburger tho. I thought they were lean and mean, but he was a big boy for sure!

the greasyness will depend on what he was fed, and how fat he was. The only time I've ever had purley lean hb was when we butchered an old cow. she was just grass fed and you had to ad oil to the hamburger to cook it. P.J.
