Here's a post with step-by-step photos (except for the one step I forgot!) of my adventure making farmhouse cheddar cheese from Dexter milk. Fun! We're still waiting to taste it after 2 months of aging. Not a CHANCE it will make it to 6 months!

You guys are lucky We dont get those kits here in SA Maybe must buy some and sell them and make a few bucks.

I sure wouldn't consider myself in the artist category by a long shot! I got the kit as an easy way to start learning. Normally I'm terrible at following recipes because I can't leave one alone--have to add my own touches and change stuff. But for making cheese I figured I better follow the recipe carefully, at least at first. Nevertheless, I've made a little goof on both my cheddar and the previous mozzarella. Neither goof seems to have been serious, but I do want to learn to do it right and then maybe someday I'll feel like branching out like you did, Sheri.
Yes, I can see that aging is a problem. Our dry basement seems to be the closest to the conditions we need, but I'm worried about mice. So I put my cheese in a large plastic bin with a top that closes but isn't air tight. I better check on it now while I'm thinking about it and make sure it's okay!

Susan, you've done a really nice job with your blog! I've been enjoying it a lot. And your cheese looks great. One of these days Sheril and I will have to give it a go, and between you and Sheri's help (I keep wanting to type my wife's name Sheril) we'll be able have some success. It's always seemed a bit intimidating to me.

Thank you so much, Hans! I really enjoy blogging and haven't run out of stuff to "talk" about yet. On the cheese, though, you'd better ask Sheri. I can give you the encouragement to jump in, but she'll give you the expert advice!
