Many world-wide chefs rank Dexter beef as the world's best beef. That may sound like a sales pitch, but when you look at the underlying genetics of Dexters, the DNA evidence tells us why Dexter beef is supreme. DNA testing labs have identified genetics for tenderness, and marbling, and ribeye size. They have DNA tested the various breeds and found that Dexters have superior beef genetics.

Kirk: you've got great computer skills. Please check out and report back on the Paddock to Palate taste tests in Australia (or was it Paddock to Plate?). I used to have the info, but no longer. Dexters won that one too. I think it was judged by Peter Chilcott.

Found this: "Without a doubt the Dexter's meat is definitely richer, you can really tell the difference.’ There’s another reason why the flavour is so good. ‘The big difference is the muscle fibres. ‘If you’ve got a huge beast like an Aberdeen Angus, you’ve got the same number of muscle fibres but they’re much, much bigger.
