???I know many of you make cheese with your dexter milk & I am wondering who all has tried making it with nettle rennet or yarrow? How did it do? I am very curious and eager to try it out, but would really like to know if dexter milk would react to it the same as milk from a different breed of cow.

I make cheese from my Dexter's milk. But I have always used regular rennet. I did make cheese from keifer cultured milk the other day, without rennet. Here is the link if anyone is interested. users.chariot.net.au/~dna/kefirpage.html

That is a great link! I just spent an hour on the pages, and bookmarked it. I have always wondered about kefir cheese, what it was, where it came from, how it was created, whether it was a viable choice for production, the real health benefits, etc. and that explained it ALL. Thank you!
