They were terrific, we weighed them 1 was 12 oz the other 11+ oz, I don't know why but this beef has the most wonderful flavor of any steer we have put by to date. I was telling the clerk at the local farm store that if I had to put my finger on it, the taste is like olive oil in the back ground, a full rich beef flavor. Some friends got me a box of mesquite wood on a trip to Texas and we use some of that on the lump charcoal it adds just the right amount of unique flavor. That is if you do your part and watch them so they don't get overdone. As you can see I put the knife and fork in there for scale. I have a fair supply of the hay that is alf and orch. grass mix that we used to finish this steer it was my forth cutting of 09 and I am going to save it for the next steer we put up to attempt to get the same flavor.

Steaks look great, I'm finishing one right now on bermuda and alfalfa, with just a little calf creep added to the mix. He goes on the 18th, I sure hope they look as good as those. P.J.
