Genebo,
I watched the video and I did not hear the term "breed improvement" used anywhere in it. The video mainly talked about selective breeding for a specific defective gene, that when it was present in the cattle, it caused excessive muscle growth to occur. Selective breeding, especially selective breeding for a single trait, does not result in "breed improvement", it results in an unbalanced animal that would not survive in natural circumstances.
When asked if those animals were healthy, the researcher responded that they were as healthy as any other livestock raised in confinement -- that sure doesn't say they are very healthy.
Looking at those cattle reminded me of some chickens that a friend was raising. Her chickens were advertised and sold as "fast growing" and "very meaty" -- the problem was that their skeltons didn't grow as fast as their soft tissue did, so many of those young chickens couldn't even stand or walk by the time they were only 2 months old, because their legs could no longer support the weight of their bodies! I sure wouldn't call that a "breed improvement".
