I have a small Dexter Herd and am interested in selling a portion of what we raise. How does one Price the product? I am raising grass fed beef, and have individuals that are interested in purchasing a portion of what we butcher.... The costs involved are the raising and feeding, killing, processing etc> How does one figure out what to sell the portion for???

Look at your local market and find out what grass fed beef sells for. Also, when you choose which slaughterhouse to use, they will be able to help. TOur the slaughterhouse first before you decide. We learned very quickly which ones to avoid.

We started out selling ours for what people in the area were selling their grass-fed for, but people soon found out how good Dexter beef is, so we now sell it state-inspected/vacuum wrapped at my husband's retail business for $8.00/lb just for the ground beef. I talked to a lady in FL that sells her grass-fed Angus burger for 9.99/lb so maybe we have a higher ceiling yet. We have a loyal customer base that found out Dexter beef is the tastiest they have had and they worry us to death until the next steer is ready. They see them in the fields and they like to know where their beef comes from so they do not complain about the price! We have not needed to sell whole/half/quarters at reduced rates, and will probably not do so as long as the retail sells so well. Have not broken it down by cost as to how much for all it takes to raise/processing, etc. but maybe we will break even someday, ha! Good Luck!
