I have a 12 month old bull and want to know if I can turn him into a steer without the meat being tainted? Or have I surpassed the timeframe and should just sell him?

You can castrate him, and then process him next year, when he is around 24 months old. Most vets will cut a bull that is 12 months old, rather than banding him, especially if he has developed a substantial pair of testicles. The meat won't be "tainted" if you don't castrate him, but steers are much easier to manage, and steers usually will fatten better than most bulls will. Developing an adequate exterior carcass fat layer is important in order to be able to dry age the carcass properly, and it's more likely to happen with a steer than with a bull.
